Which wine goes with fish?
Fish usually wants a dry, crisp white: the acidity does what a squeeze of lemon does. Delicate fish — cod, sea bass, sole — needs a light wine. Grilled or oily fish can take a white with more body and texture, and a dry rosé works well too. Avoid tannic reds, which quickly taste metallic with fish.
