Which wine goes with lamb?
Lamb wants a red wine with ripe fruit and tannins that are not too firm. The meat is tender with a gently herbal flavour of its own; a sturdy red from the Douro or Alentejo — Touriga Nacional, Aragonez — keeps up without drowning it. The longer the lamb has cooked and the richer the sauce, the fuller the wine can be. Grilled with rosemary and garlic: a soft, rounded red. Slow-roasted shoulder: an intense, spicy wine.
